Apple Meatloaf

This is our favorite meatloaf, its fast and easy to make and the leftovers are great in sandwiches or rolled up in soft tacos with cheese tomato and lettuce.
Ingredients:
1 large onion, finely chopped
2 tablespoons butter
2 1/2 lbs ground beef
1 1/2 cups fresh breadcrumbs
2 cups apples, peeled and cored, finely chopped
3 eggs, beaten
1 tablespoon chopped parsley
1/2 teaspoon ground black pepper
2 teaspoons salt
1/4 teaspoon allspice
1/4 teaspoon dry mustard
1/4 cup ketchup
Directions:
1. Saute onion in butter until soft.
2. Combine all ingredients, mixing thoroughly.
3. Form into loaf and place in 10- x 14-inch baking pan (or pack into large, greased loaf pan).
4. Bake at 350 degrees, for 1 hour.
5. Remove from oven and let sit 15 minutes before serving.
