Apple Mallow Salad

This apple salad is very festive looking using the green and red apples.
Ingredients:
1 can (20-oz.) crushed pineapple
1/2 cup sugar
1 tbsp. all-purpose flour
1-2 tbsp. white vinegar
1 egg, beaten
1 carton (12-oz.) frozen whipped topping, thawed
2 med. red apples, diced
2 med. green apples, diced
4 cups minature marshmallows
1 cup honey roasted peanuts
Directions:
1. Drain pineapple, reserving juice; set pineapple aside.
2. In a saucepan, combine sugar, flour, vinegar and reserved juice until smooth.
3. Bring to a boil; cook and stir for 2 minutes or until thickened.
4. Remove from heat.
5. Stir in a small amount of hot mixture into egg; return all to pan, stirring constantly.
6. Bring to a gentle boil; cook and stir for 2 minutes.
7. Remove from the heat; cool.
8. Fold whipped topping into the cooled mixture.
9. Fold in apples, marshmallows and reserved pineapple.
10. Cover and refrigerate for 1 hour.
11. Just before serving, fold in peanuts.
