This is a simple Latin influenced slaw that is a great side dish for summer grilling get togethers
Ingredients:
1/2 cup fresh lime juice
1/2 cup bottled apple juice
2 tablespoons chile con limon powder
* you may sub chili powder if you cannot find chie con limon
3 tablespoons rice vinegar
1 large or 2 red onion, julienned
1 large or 2 medium jicamas peeled, fine julienne
1 medium jar roasted red peppers, julienned
5 -6 granny smith apples peeled, cored, sliced and julienned
Directions:
1. Combine the Apple Juice, Vinegar, Chili Powder, in a mixing bowl and whisk untill well combined.
2. Combine the julienned jicama, onion, red peppers and apples and toss well in the dressing
3. Refrigerate at least one hour.
