Ingredients:

  • 1 tsp salt
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1-1/2 cups corn oil
  • 2 cups sugar
  • 3 eggs
  • 2 tsp vanilla
  • 1 cup pecans
  • 2 cups finely chopped apples
  • 1/2 cup raisins
  • 1/2 cup applejack brandy
  • 1/2 cup apple juice
  • 1/4 cup brown sugar
  • 2 tbsp butter

Directions:

  1. Combine flour, baking soda, salt, nutmeg and cinnamon then set aside.
  2. Beat oil, sugar, eggs and vanilla until thoroughly combined.
  3. Gradually beat in flour mixture until smooth then fold in pecans, apples and raisins.
  4. Pour into a greased and floured tube pan then bake at 325 for 1-1/4 hours.
  5. Cool in pan for 10 minutes.
  6. Combine brandy, apple juice, brown sugar and butter then bring to boil stirring constantly.
  7. Cook until sugar is dissolved.
  8. Prick top of warm cake with a fork then carefully spoon syrup over the cake.
