Apple Hand Pies

This is a take on my Grandmother's fried apple pies. The recipe was lost when she passed away. Her's had a homemade dried apple that she made herself. I've never been able to figure it out. I remember her drying the apples but the rest got lost with her.
Ingredients:
2 apples, cored, peeled and diced
1/3 c. sugar
1/2 t. cinnamon
2 c. all-purpose flour
1 t. salt
1/2 c. shortening
1/2 c. cold water
1 c. oil
garnish: powdered sugar
Directions:
1. Stir together apples, sugar, and cinnamon.
2. Cook over low heat for 8 to 10 minutes, until apples are tender.
3. Set aside.
4. Combine flour and salt; cut in shortening with a fork.
5. Stir in water to a dough consistency.
6. Roll out dough 1/8-inch thick on a floured surface.
7. Cut out with a 4-inch round cookie cutter; place one tablespoon apple mixture in center of each circle.
8. Sprinkle edges with water; fold circles in half.
9. Seal edges with a fork; set aside.
10. Heat oil in a skillet over medium-high heat.
11. Fry pies, a few at a time, for 2 to 3 minutes on each side, until golden.
12. Drain on paper towels; sprinkle with powdered sugar while still warm.
