Apple Gouda Quesadillas

An Epicurious recipe.
Ingredients:
8 (8 inch) low-carb flour tortillas
2 tablespoons olive oil
2 tablespoons dijon mustard
2 green onions, chopped
2 red apples, corred and thinly sliced
8 ounces gouda cheese, shredded
sour cream
salsa
guacamole
Directions:
1. Preheat grill (high heat).
2. Brush oil on one side of tortilla. Place on a plate oil-side-down. Spread 1/2 T mustard on tortilla.
3. Top with green onion, apple slices, and 1/2 cup shredded gouda.
4. Place second tortilla on top. Brush with olive oil.
5. Repeat. Stacking quesadillas on plate.
6. Brush grill with oil. Put quesadillas on grill. Cook 3 minutes or until crispy. Flip and grill other side for 3 minutes or until crispy.
7. Remove to serving plates, cut into quarters. Serve hot.
