Don't let knobby fresh ginger scare you. Once peeled, fresh ginger grates easily and offers a spicy kick to these sweet muffins.
Ingredients:
1 1/4 cups quick-cooking oats
1 cup 1% low-fat milk
1/2 cup packed brown sugar
3 tablespoons vegetable oil
3 tablespoons honey
1 teaspoon grated peeled fresh ginger
1 large egg
1 cup all-purpose flour
1/4 cup whole wheat flour
1 1/2 teaspoons baking powder
1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup diced peeled apple
cooking spray
2 teaspoons quick-cooking oats
Directions:
1. Preheat oven to 400°.
2. Combine first 7 ingredients in a large bowl; stir with a whisk. Let stand 15 minutes.
3. Lightly spoon flours into dry measuring cups; level with a knife. Combine flours and next 3 ingredients in a large bowl; make a well in center of mixture. Add oat mixture to dry ingredients, stirring just until moist. Gently fold in apple.
4. Spoon batter into 12 muffin cups coated with cooking spray. Sprinkle 2 teaspoons oats over top of batter.
5. Bake at 400° for 18 to 20 minutes or until muffins spring back when touched. Serve warm.
