The Chanukah tradition of frying in oil is considered the culinary equivalent of lighting a menorah. A deep-fat thermometer is an essential tool for deep-frying; check that your oil returns to 375°F between batches; this prevents the food from absorbing it. This recipe is Sarah Molten's and she served it with- what else?-brisket.
Ingredients:
1 cup all-purpose flour
3 tablespoons granulated sugar
1/4 teaspoon salt
1 cup cold beer (not dark)
5 -6 cups vegetable oil
2 apples, peeled, halved lengthwise, cored, and sliced 1/4 inch thick (1 pound)
confectioners' sugar, for dusting
Directions:
1. Stir together flour, granulated sugar, and salt, then add beer, and whisk to combine.
2. Heat oil in a deep fryer (or a 5-quart heavy pot), until the thermometer registers 375°F.
3. Dip apple slices in batter, shaking off excess, and fry, about 8 at a time, until golden, about 1 1/2 minutes on each side.
4. Transfer fritters with a slotted spoon to paper towels to drain.
5. Serve warm, dusted with confectioners' sugar.
