Pump up the fiber and reduce the sugars with this delicious muffin
Ingredients:
1/4 cup flax seed
3/4 cup whole wheat graham flour
3/4 cup white flour
1/4 cup sugar
1/4 cup splenda (baking granules)
2 tsp baking powder
1/2 tsp. baking soda
1/2 tsp salt
1 egg, beaten
1 1/2 cups apples, chopped
3 tbls canola oil
1/2 cup skim milk
1/2 cup nuts, chopped
Directions:
1. Heat Oven to 400 degrees
2. Blend dry ingredients
3. In separate bowl combine egg, vegetable oil and milk
4. Add dry ingredients to egg mixture until blended
5. Fold in apples
6. Batter will be thick
7. Spray muffin cups with non-stick spray
8. Spoon batter into muffin cups 2/3 cup full
9. Bake 18-20 minutes or until top springs back
