These easy, apple pancakes are great for the fall. We always had them on weekends when we were kids. Originally published in the Wenatchee World newspaper.
Ingredients:
1 1/4 cups dry pancake mix
1 tablespoon sugar
1/4 teaspoon cinnamon
1 egg
1/4 cup butter; melted
1 cup apples; peeled and finely chopped or shredded
1/2 cup water (or as needed to get the right batter consistency)
Directions:
1. Add sugar and cinnamon to pancake mix.
2. Combine the rest of the ingredients and add to pancake mix, beating until smooth.
3. Bake on hot greased griddle, turning only once.
4. Makes about 16 4-inch pancakes.
5. NOTES : Serve hot with butter and maple syrup.
