Ingredients:
2 cups grated apples, skin on
2 cups brown sugar
2 cups water
1/3 cup margarine
2/3 cup applesauce
2 teaspoons cinnamon
1 teaspoon ground ginger
3 cups whole wheat flour
1/2 cup rolled oats
2 teaspoons baking soda
Directions:
1. Preheat oven to 350F and line muffin tin with cupcake papers.
2. Put the first seven ingredients into a large saucepan and bring to a boil.
3. Cool, add flour and soda.
4. Fill paper lined cupcake tins 2/3 full and bake until cupcakes spring back when touched in the center
