This is a simple low sugar version of a crustless apple crumble. Changing the type of apples will also allow for different flavors and textures. I have used Golden Delicious apples mixed with Empire apples and have been very pleased.
Ingredients:
6 apples, peeled, cored, and sliced
2 tablespoons barley flour
1 teaspoon cinnamon
2 tablespoons lemon juice
1 teaspoon butter
2 tablespoons flax seeds, ground
2 tablespoons wheat germ
1/2 cup rolled oats
1/3 cup almonds
2 tablespoons barley flour
2 tablespoons brown sugar
1/2 teaspoon cinnamon
2 tablespoons canola oil
Directions:
1. Toss the sliced apples in the lemon juice as your are cutting them.
2. Combine the barley flour and cinnamon with the apple mixture.
3. Place in a 9 inch pie plate and dot the top with butter.
4. Combine the flax seeds, wheat germ, oats, almonds, flour, sugar, and cinnamon in a bowl and stir together.
5. Stir in the canola oil to make it look like crumbles. You can add some water if it's not moist enough.
6. Place the crumble topping on the pile of apples in the pie plate.
7. Bake at 350°F for 50 minutes.
