Wow! I had this at a friend's house, and it's heavenly. The best part is the instructions allow for cooking outdoors in a Dutch oven or indoors. It says it serves 8 to 10, but don't kid yourself-you'll eat more than a serving-especially if it's topped with a little vanilla ice cream. DELICIOUS! Recipe courtesy of The Outdoor Dutch Oven Cookbook, 1997.
Ingredients:
butter
3 cups quick oats
2 cups brown sugar
1 cup unbleached all-purpose flour
1 teaspoon baking soda
2 teaspoons salt
1 cup butter, melted
6 -8 apples (peeled, cored, and thinly sliced)
2 teaspoons cinnamon
2 teaspoons nutmeg
Directions:
1. Butter Dutch oven or 9x12 inch pan.
2. Mix together oats, brown sugar, flour, baking soda, and salt.
3. Add melted butter and combine.
4. Cover bottom of Dutch oven or pan with half of crust mixture.
5. Mix apples with cinnamon and nutmeg.
6. Layer in Dutch oven or pan about 2 inches thick over bottom crust.
7. Spread remaining crust mixture on top.
8. Bake for 40 to 50 minutes with coals on top of and beneath Dutch oven.
9. For conventional cooking, bake in 350 oven for 40 to 50 minutes.
