Apple Cream Cake

One look and you just have to have a piece. It has a wonderfully creamy and appely taste. Looks good, smells good, tastes good. Give it a try!
Ingredients:
5 eggs at room temperature
1 1/2 cups sugar
1 tsp vanilla
2 cups all-purpose flour
2 tsp baking powder
1/4 tsp salt
1 large apple, pared, cored, and diced
1/2 cup chopped pecans
1 1/2 cups heavy cream, whipped
Directions:
1. Beat eggs,at high speed, in large bowl. Add sugar, 1 tablespoon at a time, until a
2. stiff whole-egg meringue forms, beat in vanilla.
3. Sift flour, baking powder and salt over; fold into egg mixture, one-third at a time, with
4. a wire whisk; fold in apple and nuts.
5. Line two 9 layer cake pans with wax paper. (Do not grease paper or pans).
6. Divide batter in prepared pans.
7. Bake in slow oven (325F) 30 minutes, or until layers are golden and begin to pull.
8. Cool completely in pans on wire racks; invert one layer onto serving plate; peel off
9. wax paper.
10. Fill with whipped cream; invert second layer over dream; peel off wax
11. paper.
12. Decorate with whipped cream, apple slices and pecans, if desired.
