This is an easy and light apple cranberry crisp that is perfect for people who don't like their desserts too sweet. You can omit the cranberries or substitute them with blueberries or raspberries.
Ingredients:
5 granny smith apples
1/3 cup fresh cranberries (blueberries or raspberries)
2 tablespoons white sugar
2 tablespoons light brown sugar (do not use dark brown)
1 -2 teaspoon cinnamon
2 tablespoons melted butter
3/4 cup flour
1/2 cup oatmeal (old fashioned)
1/4 cup white sugar
1/4 cup light brown sugar
11 tablespoons butter (slightly softened)
Directions:
1. Preheat oven to 375°F.
2. Lightly butter your 8 x8 baking dish.
3. Combine apples, berries, white sugar, light brown sugar in a bowl and add to the baking dish.
4. Combine flour, oatmeal, white and light brown sugars in a separate bowl.
5. Add butter and mix with hands until crumbly.
6. Pour melted butter over the apples.
7. Cover apples with as much topping mixture as you feel necessary (you do not need to add the entire mixture).
8. Bake for about 35-40 minutes until topping is golden in color, do not bake until fully browned.
9. Serve with vanilla ice cream or whip cream (or both).
