Apple Cinnamon Whole Wheat Pancakes

Ingredients:
3/4 cup whole wheat flour
1/2 cup oatmeal
1/2 tsp salt
1 tsp baking powder
1/3 cup milk, non-fat, dry
1 tsp cinnamon
3/4 cup applesauce
1/2 cup water
1 egg
Directions:
1. Add dry ingredients in large mixing bowl. Stir together. Add applesauce and water. Stir until combined.
2. Separate egg, reserving egg yolk. Beat egg white until stiff peaks form. Gently fold into pancake batter.
3. Drop 1/4 cup amount onto medium low heat nonstick or well-seasoned cast iron skillet. Turn once when bubbles form on top of pancakes.
