this is my way dealing with the guilt i get when my kids have their waffle addiction days, i try to add in a little bit of fiber and vitamin( hence the apple..) eventually it has become one of my basic recipes for waffles! Read more !
Ingredients:
2 shredded apples(with or without peal)
2 eggs
1 cup yogurt (can be low fat)
1/4 cup canola oil
1 1/2 cups flour
2 tsp vanilla powder
2-3 tsp cinnamon
1 tsp baking powder
Directions:
1. preheat the waffle maker
2. mix the dry ingredients, then add the rest and mix with a spoon (no need to get your mixer out!)
3. you may need a bit of extra water depending on the type of flour.
4. leave the batter few minutes to calm down..
5. put the amount required for your waffle maker and have it bake for about 4-8 minutes (the surface should get gold-brown and hard-ish)
6. have it cool a bit before serving so no one burns their tongues!
7. don't forget the maple syrup..
