Apple Cinnamon Rice

A nice change of pace side dish for pork chops.
Ingredients:
3/4 cup long-grain rice
1 1/2 cups apple juice
1 cup chunky applesauce
1/4 cup raisins
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup chopped fresh parsley
Directions:
1. In medium saucepan, combine all ingredients except parsley. Bring to a boil and stir. Reduce heat to simmer; cover and cook 25 minutes or until rice is tender. Stir in parsley.
