Muffin
Ingredients:
1 cup whole wheat flour
1/2 cup white flour
1 cup wheat bran (or all-bran)
1 tbsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
1 1/4 cups applesauce, unsweetened
1/2 cup egg white
1/3 cup sugar (or honey)
2 tbsp oil
1 medium apple, shredded
Directions:
1. Combine dry ingredients and mix well
2. In another bowl, whisk liquids together, then add apple
3. Pour into flour mixture
4. Stir until just moist
5. Spoon into prepared muffin tin and bake at 425 for 20 minutes
6. *add 1/2 cup sunflower seeds if desired
