Apple-Cheddar Soup

This soup is great. From BH&G.
Ingredients:
1/2 cup finely chopped onion
1 tablespoon butter
2 medium baking potatoes, peeled and diced
2 cups apple cider
1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
1/2 teaspoon salt
1 dash cayenne
1 medium cooking apple, peeled and coarsley chopped
1/2 cup milk
2 tablespoons all-purpose flour
4 ounces sharp cheddar cheese, shredded
fresh apple, slices
green peppercorn
Directions:
1. In large saucepan cook onion in hot butter over medium heat until tender.
2. Stir in potatoes, cider, thyme, salt, and cayenne pepper. bring to a boil, then reduce heat.
3. Simmer, covered, 15 minutes.
4. Add chopped apple; simmer covered 5 minutes or until potatoes are tender.
5. In a small bowl combine milk and flour and stir into soup.
6. Cook and stir until bubbly.
7. Slowly add cheese and whisk until cheese is melted.
8. Divide soup among serving bowls: top with apple slices and peppercorns.
