Apple Carrot and Raisin Salad

This light and fresh salad makes a nice sweet side to any poultry dish, such as grilled chicken or turkey.
Ingredients:
2 carrots, shredded
1 apple, julienned (preferably pink lady or ambrosia)
2 -3 tablespoons raisins (or a combination) or 2 -3 tablespoons sultanas (or a combination) or 2 -3 tablespoons craisins (or a combination)
1 teaspoon cinnamon honey
1 teaspoon lemon juice
2 teaspoons citrus peppercorn vinaigrette dressing
Directions:
1. Combine the first three ingredients in a serving bowl and toss to combine.
2. Whisk together remaining ingredients and pour over salad; toss to coat.
3. Enjoy!
