Apple Cake With Brown Sugar Topping

In the Fall, when apples come into season, this is my family's favorite dessert. It’s very low in fat – something I can’t say about most of my desserts! It’s even better when served warm with some fresh whipped sweetened cream (aren't most desserts? Read more ?).
Ingredients:
3/4 cup sugar
1 tablespoon butter, softened
1 egg
1 cup flour
1 teaspoon cinnamon
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3 apples, cored, peeled and diced (i use gala, but use whatever you prefer)
brown sugar
fresh sweetened whipped cream or vanilla ice cream, optional
Directions:
1. In large bowl, mix together sugar, butter and egg.
2. Add flour, cinnamon, baking powder, baking soda and salt; batter will be very stiff.
3. Add diced apples and blend into batter to moisten.
4. Pour into greased 8x8 baking dish.
5. Sprinkle brown sugar generously over top of batter.
6. Bake at 350 degrees for 45 to 55 minutes.
7. Serve with whipped cream or a scoop of ice cream.
8. Do not refrigerate.
