This is one my favorite cakes to make: moist and yummy.
Ingredients:
1/2 cup chopped pecans
2 1/2 cups finely chopped granny smith apples
1/2 cup butter, softened
1 cup sugar
1 egg
1 teaspoon baking soda
1/4 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon vanilla
1 cup all-purpose flour
1/2 cup butter
1 cup brown sugar
1/2 teaspoon salt
1 teaspoon vanilla
1/2 cup evaporated milk
Directions:
1. In large bowl, cream the butter.
2. Add the sugar and beat until fluffy.
3. Add the egg and beat until well blended.
4. Mix in the soda,salt, cinnamon and nutmeg.
5. Add flour and stir just until blended.
6. Fold apples and nuts.
7. Pour into an oiled 9 round cake pan and bake 350 degrees for 30 minutes until the top springs back when touches lightly with your fingers.
8. Serve with Hot Caramel Sauce.
9. In sauce pan melt butter, brown sugar and salt.
10. Bring to a boil.
11. Remove from heat and whisk in vanilla and milk.
12. Serve warm sauce over cake.
