This is a great recipe to use up leftover stale bread! Try to use Granny Smith apples for this if not use a firm baking apple, you can add in some frozen cranberries or fresh blueberries in with the apples if desired, just reduce the apples slightly :)

4 slices sandwich bread (use day-old bread)
3 tablespoons melted butter
1/3 cup sugar
1/3 cup brown sugar, packed
1 teaspoon cinnamon (can use more)
1 pinch salt

2 lbs granny smith apples, peeled and sliced
1/2 cup apple cider
2 teaspoons grated lemon zest
2 tablespoons fresh lemon juice
1 1/2 teaspoons vanilla
vanilla ice cream
Directions:

2. Butter an 8-inch baking dish.
3. In a food processor process the bread until finely ground (you should have 2 cups of breadcrumbs).
4. In a bowl combine the breadcrumbs with melted butter; set aside.
5. In a large bowl combine the white sugar, brown sugar, cinnamon, pinch salt and allspice.
