Apple Bread Pudding With Maple Cream

Ingredients:

  • 1/2 cup raisins
  • 2 tbsp butter
  • 1/4 cup brandy
  • 1 tsp cinnamon
  • 1/4 tsp allspice
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 tbsp sugar
  • 2 eggs
  • 1 1/4 cups cream
  • 3/4 cup sugar
  • 1 1/2 tsp vanilla
  • 1/2 cup flour
  • 1/4 cup butter
  • 3 tbsp sugar
  • 1 tbsp cinnamon
  • 2 cups maple syrup
  • 1/4 cup brandy

Directions:

  1. PUDDING.
  2. Slice apples thinly.
  3. Melt butter over medium heat.
  4. Add apples, brandy, raisins, and spices. Cook until apples are tender.
  5. Butter an 8 inch deep casserole dish and sprinkle with the 1 Tbsp sugar.
  6. Alternate layers of apple and bread.
  7. Mix together eggs, yolks, cream, sugar, vanilla, and pour over bread.
  8. TOPPING.
  9. Mix ingredients with a pastry cutter or fork to form a crumbly texture.
  10. TO BAKE.
  11. Sprinkle topping over top of pudding.
  12. Bake at 350 degrees for 1 hour 15 minutes in a 1 hot water bath.
  13. MAPLE CREAM.
  14. Over medium light heat, cook the brandy and syrup until it starts to darken.
  15. Whisk in cream.
  16. Do not allow to boil.
  17. Pour over pudding when it's finished baking.
