APPLE BREAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hayden Estate in Caddo Mills, Texas in 1984.
Ingredients:
1 cup butter softened
1 cup granulated sugar
1 teaspoon baking soda
1 tablespoon fresh lemon juice
2 eggs
2 teaspoons vanilla
2 cups all purpose flour
1/4 teaspoon salt
1-1/2 cups tart apples peeled and chopped
crumb ingredients
1 teaspoon cinnamon
2 tablespoons granulated sugar
2 tablespoons flour
2 tablespoons butter chilled
Directions:
1. Cream butter and sugar together then in another bowl dissolve soda in lemon juice.
2. Mix in eggs and vanilla then beat butter mixture and egg mixture together.
3. Add flour and salt gently then fold in apples and set aside.
4. Mix crumb ingredients cutting in butter with pastry blender until mixture forms coarse crumbs.
5. Place 1/2 of the batter into greased loaf pan then sprinkle with 1/2 of the crumb mixture.
6. Pour in remaining batter and sprinkle with remaining crumb mixture.
7. Press crumbs gently into surface of batter then bake at 375 for 1 hour and 15 minutes.
8. Cool 5 minutes in pan then remove from pan and cool completely on wire rack.
