Ingredients:
2 cups white sugar
4 large eggs
1/2 cup mayonnaise
1/2 cup buttermilk
1 teaspoon vanilla
3 3/4 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons cinnamon
3 medium granny smith apples, cored and chopped
1 cup raisins
1 cup chopped walnuts
Directions:
1. In a large bowl mix together the first five ingredients until smooth.
2. In another bowl mix the flour, salt.
3. baking powder and soda and cinnamon.
4. Add the egg mixture to this and stir to combined.
5. Add the apples, raisins and nuts-stir to just mixed.
6. Spread batter into two well greased bread pans.
7. Bake in a 375°F oven for about 1 hour to 1 hour and 15 minutes-do the toothpick test.
8. Let cool in pans on racks for 10 minutes-turn out and cool completely.
