Yummm, this recipe is a fave of mine.
Ingredients:
3 apples, grated - i like cortland
1/2 cup butter or margarine
3/4 cup brown sugar
2 eggs
1/2 cup vanilla yogurt
1/2 cup milk
1 tsp. vanilla extract
1-1/2 cups all-purpose flour
1/2 cup whole wheat flour
1 tsp. baking soda
1/8 tsp. salt
1/4 cup golden raisins
3/4 cup semi-sweet chocolate or butterscotch chips
Directions:
1. Preheat oven to 350° F.
2. Cream together butter/margarine and sugar.
3. Blend in eggs, sour cream, milk and vanilla.
4. Sift dry ingredients together and blend into creamed mixture.
5. Add grated apples, raisins and chocolate OR butterscotch chips.
6. Spread batter into a 9 inch square baking dish which has been coated with either butter/margarine/a butter flavored vegetable spray.
7. Bake for about 45 minutes, or until lightly browned.
8. Cool and cut into squares.
9. Makes 24 squares
