Apple and Spinach Salad

A little twist on spinach salad.
Ingredients:
3 apples, peeled, cored and diced
3 green onions, sliced thin
3 stalks celery, diced
1/3 cup fresh lemon juice (2 lemons)
1/4 cup mayonnaise
1/4 cup tahini
2 tablespoons honey
1 bunch spinach, torn into bite-size pieces
1/4 cup sesame seeds, toasted
Directions:
1. In a large bowl, combine apples, onions and celery. Sprinkle with the juice of one lemon to avoid discoloration; set aside.
2. In a blender, or whisk in a small bowl, blend mayonnaise, tahini, honey and remaining lemon juice until mixture becomes thickened. Toss with apple mixture. Cover and refrigerate until time to serve.
3. Just before serving, toss salad with spinach. Serve on a bed of spinach leaves and garnish with sesame seeds.
