Apple and Scallion Sausage Patties

Easy to make the patties the night before and fry them up in a skillet the next morning.
Ingredients:
1 1/2 lbs ground pork
1 egg, beaten
4 -5 scallions, finely chopped
1 large tart apple, finely chopped
1/2 teaspoon salt
1/2 teaspoon black pepper
1/8 teaspoon cayenne
1 1/2 teaspoons ground sage
1 tablespoon honey
Directions:
1. In a large bowl, with clean hands, mix all ingredients in a large bowl.
2. Form into 3/4 thick patties.
3. In a skillet over moderate heat, cook sausage patties until center is no longer pink.
