Apple And Rice Pudding

Very nice dessert sure to please all. We love this and hope you will as well.
Ingredients:
2 cups water
1 cup uncooked long grain brown rice
2 cups milk
1 cup heavy cream
2 large eggs
1/4 cup sugar
1/4 teaspoon salt
2 large apples peeled cored and coarsely chopped
1/2 cup dark raisins
1/2 cup dried apricots quartered
2 tablespoons vanilla extract
Directions:
1. In a heavy saucepan heat water to boiling then stir in rice.
2. Cover and cook over low heat for 20 minutes.
3. Add milk to rice in saucepan and cook 20 minutes stirring occasionally to prevent sticking.
4. In small bowl beat cream and eggs with a wire whisk then stir in sugar and salt.
5. Whisk into rice mixture along with apples, raisins, apricots and vanilla.
6. Cook stirring occasionally until mixture thickens but do not boil.
7. Spoon rice mixture into a greased shallow baking dish and bake 30 minutes.
8. Serve warm or cold.
