Apple and Onion Chicken

This is a delicious dish, simple and juicy. If you are looking for a dish with suttle, mild flavors, but still tasty, this is it. I particularly am not always in the mood for lots of spice...
Ingredients:
3 medium apples, sliced (i use whatever i have handy and don't peel them)
1 small onion, thinly sliced
1 tablespoon butter
6 chicken breast halves, boneless and skinless (5 oz each)
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
3/4 cup shredded reduced-fat swiss cheese
1/4 cup grated parmesan cheese
1/4 cup seasoned bread crumbs
1/2 teaspoon minced fresh thyme
2 tablespoons unsweetened apple juice
Directions:
1. In large skillet saute apples and onions in butter for 10 minutes.
2. Transfer to a 13 x 9 x 2 baking dish coated with cooking spray. Top with chicken and sprinkle with salt, pepper and garlic.
3. Combine cheeses, bread crumbs and thyme and sprinkle over chicken. Drizzle with apple juice.
4. Bake uncovered at 350F for 30-35 minutes, or until chicken juices run clear.
