Apple Almond Quinoa With Curry Vinaigrette

Ingredients:
1 gala apples, sliced
3 cups quinoa, cooked
1/4 cup almonds, slivered, toasted
1/4 cup currants
1 tablespoon olive oil
2 tablespoons lemon juice
1 dash honey
1 shallot, minced
1 teaspoon curry powder
1 dash salt
1 dash pepper
Directions:
1. Mix dressing ingredients together: olive oil, lemon juice, minced shallot, curry powder, salt and pepper. Taste, adjust as needed for your taste.
2. When quinoa has cooled, add all other ingredients.
3. Mix with dressing. Do not drown with dressing. It should be background, not foreground in taste.
