Aoife's Thai Butternut Squash Soup

spicy thai butternut squash soup
Ingredients:
100 g onions
15 g fresh chillies
3 cloves garlic
15 g ginger root
10 g lemongrass
1 kg butternut squash
400 ml low fat coconut milk
10 g nam pla
3 tbsp lime juice
1 tbsp olive oil
1 l water
Directions:
1. add the olive oil to a large saucepan, and fry the onion, chilli, garlic, ginger and lemongrass until the onion softens
2. add the squash, coconut milk, a vegetable stock cube, nam pla and enough boiling water to cover the squash
3. bring to the boil, cover and simmer for 20 minutes, or until the squash is soft
4. Blend the soup with a hand blender, and add the lime juice.
5. Extra portions can be frozen
