these delicious biscuits (cookies) were made to send to the ANZACs (Australian and New Zealand Army Corps) serving in Gallipoli. Which I found in the Good Food guide and they are totally yummy!
Ingredients:
85g - 3 oz porridge oats
85g - 3oz desiccated coconut
100g - 4 oz plain flour
100g - 4oz caster sugar
100g - 4oz butter, melted
1 tbsp golden syrup
1 tsp bicarbonate of soda
Directions:
1. preheat oven to 180C - gas 4
2. put the oats, coconut, flour and sugar into a bowl
3. melt the butter and stir in the golden syrup
4. add the bicarb to 2 tablespoons boiling water stir into the butter mix
5. make a well in the dry ing.
6. pour in the butter mix and stir gently to incorporate the dry ing.
7. put desert spoonfuls of the mix onto lightly greased baking sheets
8. allow 1 between for spreading
9. bake for 8 -10 min until golden
10. cool on a wire wrack
