This dish can be eaten for breakfast, lunch or dinner!! Warm up some tortilla's and salsa and make it a burrito night.
Ingredients:
8oz shredded frozen hash browns or o'brien potatoes, thawed and drained
4 tablespoons (1/2 stick) butter, melted
6 large eggs, beaten
1/4 cup milk
3/4 cup diced cooked ham
1/2 cup diced green onions
1 cup shredded cheddar
salt and freshly ground black pepper
Directions:
1. Preheat oven to 350 degrees F.
2. Spray pam or butter the a 9X13 pan. Spread the thawed hashbrowns or o'brien potatoes evenly on bottom of a greased pan.
3. In a large mixing bowl, combine the remaining ingredients and pour the egg mixture over the potatoes and put into the oven.
4. Oven temperature should be 350 degrees F bake for about 30 minutes until the eggs is light golden brown on top and puffed.
5. Cool and cut (Should look like lasagna slices). Serve with salted tomatoes .. You can use any kind of meat. I use ham cubes.
