Any Fruit Muffins

Simple muffin using jam or preserves for the fruit flavor. Substitute any flavor you like.
Ingredients:
10 ounces all-purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1 3/4 ounces light brown sugar
3 1/2 ounces white sugar
1 cup buttermilk
1/4 cup unsalted butter (melted)
1/4 cup apricot preserves
Directions:
1. Preheat oven to 400 degrees F (205 degrees C).
2. Stir together the flour, baking powder, salt and sugars in a large bowl. Make a well in the center.
3. In a small bowl beat egg. Stir in buttermilk and melted butter.
4. Add milk mixture to flour mixture. Mix gently with a rubber spatula until moistened, but do not beat. The batter will be lumpy.
5. Spoon one tablespoon of batter into paper lined muffin pan cups. Add one teaspoon of jam to each cup. Fill cups with remaining batter.
6. Bake for 20 minutes, or until golden.
