My friends 'Granny used to make this and we would have it served on crackers or toast cut into squares
Ingredients:
1 big head of cauliflower, cut in 1/2 in. chunks
1 bunch of celery, cut into 1/2 in. chunks
3 lg. onion, cut in half & then into slices
1 bunch of carrots, cut into 1/2 in. chunks
1 14 oz. bottle of salad olives
4 cans of tuna, in water
1 lg can of tomato paste
1 pint of olive oil
1 red & gr. peppers, cut into 1/2 in. chunks
1 qt. of cider vinegar
1/2 lb. sliced mushrooms
Directions:
1. Soak carrots, cauliflower, celery in 2 T. salt over night
2. Drain well - don't rinse
3. In large kettle put in vinegar and carrots boil for 5 minutes.
4. Add rest of veggies. cook until tender.
5. add tomato paste, olives and tuna. bring to a boil again.
6. Keep hot.
7. process in hot canning jars
