Another Chicken Salad

I just threw this together, not knowing what to make for dinner after a day of shopping. I have many recipes, like you all do for Chicken Salad. Thought I'd add another. Tasty!
Ingredients:
3 chicken breast, boneless
1 cup chicken stock
water
2 stalks of celery, chopped
1 small onion, chopped
2 dill pickles, seeded and chopped
handful of dried cherries or cranberries
handful of walnuts or pecans or almonds
pepper
sylvia's soulful season salt
for dressing
1 cup hellman' mayonnaise (you can use light!)
3 tbs of marzetti's cole slaw dressing
1/4 tsp dill
1/4 cup sour cream (you can use light!)
1/4 tsp cumin (add more if you like)
1/4 tsp celery salt
chopped green onions (about 2)
Directions:
1. Poach the chicken until done, using water and chicken stock. Season with Sylvia's Soulful Season Salt. I love this !! (about 30 minutes)
2. Drain the chicken and let cool in collandar .
3. After cool, shred the chicken and place in bowl.
4. Add the celery, onion, pickle and mix gently.
5. Prepare the dressing and fold into the shredded chicken
6. Mix in the dried berries and walnuts.
7. Season with pepper.
8. Do not add salt! With The celery salt, Cumin and Syvia's blend, there is plenty. Next day, you may want to add salt for your personal taste!
9. Chill for about 60 minutes.
10. Serve on lettuce or make a great sandwich!
11. P.S I added about 6 whole pepperoncini from a jar in the fridge and added while the salad was chilling....WOW..more flavor..I create stuff like this after the recipe is done sometimes it works!!
