Ann's Cornish Hens (My Great Recipe Cards)

Cutting down on meat portions is an easy way to cut calories. These Cornish Hens are split and marinated in a fragrant mixture of soy sauce, orange juice, garlic, onions and a small amount of oil. Broil quickly and serve with a tangy dipping sauce, if desired.
Ingredients:
2 cornish hens
1/2 cup light soy sauce
1/2 cup orange juice
1/4 wine vinegar
1 -2 tablespoon oil
2 green onions, minced
1 garlic clove, minced
1 tablespoon orange rind, grated
3 tablespoons light soy sauce
3 tablespoons orange juice
1 tablespoon wine vinegar
1 teaspoon orange rind
1 garlic clove, minced
Directions:
1. Rinse hens and pat dry. Cut into halves from the center of back through breast. Remove excess fat and tails.
2. Combine marinade ingredients. Spoon some under the breast skin. Coat hens on all sides. Marinate at room temperature for 1 hour or covered in the refrigerator for 2 hours or more.
3. Place pieces skin-side down on broiling pan. Broil 6 to 7 inches from heat for 10 minutes. Turn and broil 10 minutes longer.
4. Spoon remaining marinade over the hens. Bake at 350 for 10 minutes.
5. If used, combined Dipping Sauce ingredients in saucepan. Heat slightly and serve with the hens.
6. Prep time does not include the time to marinate.
