Annie's Cheesy Wild Rice Soup

Ingredients:
12 ounces wild rice
1 (32 ounce) can chicken broth
1 chopped onion
6 carrots, chopped
3 stalks celery, chopped
3 (10 ounce) cans cream of potato soup
4 (10 ounce) cans milk
1 lb velveeta cheese, cubed
Directions:
1. In a large soup pot, boil the rice in water for 30 minutes.
2. Rinse.
3. Boil rice 1 hour more in 1 large can of chicken broth.
4. Add chopped onion, carrots, and celery.
5. Cook until veggies are tender.
6. Add cream of potato soup and milk.
7. Add cubed velveeta and cook on low til melted.
8. Thin with more milk, if desired.
9. Heat slowly - Do not boil.
