Absolutely the best Stuffing i have ever eaten 100 %.Not only good for Thanksgiving but for all occasions !
Ingredients:
1 whole chicken
2 cast iron skillets full of your favorite cornbread. folks with this recipe you can make it from scratch or you may use a good mix (just do not use a sweet mix)
2 large yellow onions
1 bunch celery
6 eggs
10 slices white bread toasted
1 2 sleeve plain salted crackers
1 teaspoon poultry seasoning (folks go buy a new one don't use the one that has been in your cabinet for 17 years )
salt and pepper to taste (sorry i do not have measurements for these)
Directions:
1. Annie Mae was my Grandmother on my mothers side. Her last name was Holiday and YES we are related to Doc My Grandfather was a Cattleman and my Grandmother owned a Country Grocery Store. I learned most of my good recipes from my Grandmother who cared enough to take the time to teach me . I miss her terribly and think back to my childhood each time I cook this dressing !!!!
2. Start by Chopping the vegetables to a fine dice.
3. Wash and salt and pepper the whole Chicken. You will bring this to a boil in a large stock pot along with 1 2 the chopped onions and celery.After the chicken has cooked , remove to a plate to cool and debone. Reserve the stock this will be used in your stuffing.
4. I use a large aluminum foil disposable Turkey roasting pan to make this recipe in.Crumble your Cornbread,white toast and crackers in the bottom of the roaster.
5. Add 1 cup of your deboned cut up Chicken to the roaster as well as the remainder of the onions and celery and the salt, pepper and the poultry seasoning.I usually make salad out of the remainder of the Chicken for a snack !!!
6. Mix in your homemade chicken broth until the mix is just damp and add the 6 raw eggs.Stir the stuffing well to combine all the ingredients .Cover with aluminum foil and seal tightly.
7. In a preheated 350 degree oven Cook the stuffing for 30 minutes then remove the foil and cook an additional 30 minutes. I dearly love this and wish i could cook it with My Grandmother one more time. She was a great cook !! I miss you Grandma
