Low carb quiche
Ingredients:
12 eggs
4 oz cream cheese
1 cup of grated cheddar cheese
1 cup of half and half
2 cups of chicken, breast, meat only
9 medium slices of bacon
Directions:
1. Cook and shred chicken.
2. Slice bacon into small bits and fry.
3. In a small bowl, microwave half and half and cream cheese at med-low power until cream cheese is soft.
4. In a large bowl mix eggs, half and half, and cream cheese until well blended. Add any spices you desire.
5. Fold cheddar cheese, chicken, and bacon into mixture.
6. Pour mix into an 8x8 pan.
7. Bake at 400 degrees for 20 minutes, then reduce temperature to 300 and bake for 1 hour or until top is a light golden brown.
