Does anybody else remember Arlo Guthrie? His song Alice's Restaurant? There was actually a cookbook by Alice with wonderful, homey recipes. Ann McCord's corn from that cookbook is one of my husband's favorites to use for leftover corn in the summer. Ingredients:
2 t. butter |
corn cut from 3 ears of corn |
sprinkle chile powder to taste |
1/4-1/2 cup of shredded cheddar cheese |
salt and pepper to taste |
Directions:
1. Melt butter in large skillet, add corn and saute until its warmed through nicely. Sprinkle chile powder (I like mine SPICY!), then add salt and pepper to taste and continue cooking until the chile powder disperses and turns everything red. When the corn is ready, sprinkle the cheese over all and stir until it is just melted. Serve. 2. NOTE: Obviously this can be adjusted for more or less people quite easily. This is great with meats from the grill. |
