Angs Springfield Mo Style Cashew Chicken

This is a dish that was created in my city. (see luvshk's recipe for more info) It is an absolute, favorite, comfort food for me. This is my version.
Ingredients:
(this is how i do my chicken..use my recipe or your own..and if you're feeling lazy get some frozen)
4-6 chicken breasts cut into bite-size pieces marinade in 1/4 cup dale's seasoning 20 mins to an hour
3 eggs beaten
2 cups flour seasoned with
garlic salt
paprika
pepper
crushed red pepper flakes
oil for frying
sauce
4 cups chicken broth
4 tblsp oyster sauce
4 tblsp corn starch with enough water to make a slurry
1-2 tblsp soy sauce..to taste
garnish
chopped green onions
cashews (toasted in oven)
Directions:
1. There are no vegetables in this recipe..I repeat no veggies! So if you've been googling for it (you know who you are) and see a recipe with veggies in it, it is not Springfield style. You want veggies..get some eggrolls..lol (Ok well there are green onions if you want em.)
2. Dredge chicken in flour, egg, then flour again...fry in oil till a lovely golden brown.
3. While frying chicken, bring chicken broth and oyster sauce just to a slight almost not boil. Make a slurry with cornstarch and cold water. Whisk slowly into chicken broth/oyster sauce. Then bring to a boil till thickened..(took me a long time to get the timing right for a thick sauce, think I've got it down now!) Add soy sauce to taste....
4. I like to use white rice as the base but alot of places serve it with fried rice..both are good.
5. Top your rice with chicken, sauce, chopped green onion and toasted cashews. And enjoy!
