this recipe is a comfort food. You know, the warm fuzzy feeling you get when something just hits the spot.
Ingredients:
1 lb. angel hair pasta
3 cloves garlic, minced
3 tbsp. olive oil
1 lb. scallops
1 pkg. sun-dried tomatoes (about 10 tomatoes), crumbled
1/2 cup lemon juice
1/2 cup dry white wine (chicken stock may be substituted)
salt and pepper, to taste
2 tbsp. butter
freshly grated parmesan cheese
Directions:
1. Prepare pasta al dente. Drain and set aside.
2. In a large skillet, over medium- high heat, saute garlic in olive oil for about 1 minute.
3. Add scallops and cook for about 1 minute on each side.
4. Add sun-dried tomatoes, lemon juice and wine. Bring to a boil, reduce heat and simmer for 5 minutes. Season with salt and pepper to taste.
5. Stir in butter and toss with pasta. Top with cheese
