Being typical “California Brats”, my friends and I had explored most of the state by the time we were in our late teens and had discovered Anderson’s. Back in those days, it was all you could eat for a buck something and they threw in the crackers. Read more . More than once we motored over 800 miles, round trip, just for the joy of being on the road and to get a bowl (or six) of Anderson’s Split Pea Soup. We even got one of the waitresses to get us the recipe. I live a long way out of town now so I make my own Split Pea Soup and over the years I’ve started to add a couple strips of finely chopped bacon and a pinch of a spice or two to the recipe but the soup still brings back fifty years worth of memories. Ingredients:
8 cups water
2 slices smoked bacon, chopped
1 small clove garlic
2 cups green split peas
1 rib celery, strings removed & coarsely chopped
1 large carrot, chopped
1 small onion, chopped
pinch basil (to taste)
dash red pepper (to taste)
1 bay leaf
salt & fresh ground pepper to taste
Directions:
1. • Place the bacon in a large soup pot and saute until cooked but not crisp
2. • Add water, peas, celery, carrot, onion, Basil, red pepper, garlic and bay leaf to the pot. Season to taste with salt and pepper.
3. • Boil on medium heat for 20 minutes, then reduce heat, cover, and simmer until split peas are tender, stirring occasionally; about 1 hr.
4. • Let cool until you can touch the pot without getting burned.
5. • Find & remove the Bay leaf then press soup through fine sieve, or work it over with a good hand blender, and reheat just to boiling point.
6. This should serve 6 - 8 people and don’t forget the crackers. If you’re feelin fancy put a small dollop of sour cream on the soup when served. Now days everyone wants to make THICK split pea soup. You don't want it watery but too thick is a grung.
