We save those leftover packets of powdered cheese that come in those mac and cheese boxes. They are useful for any number of uses include adding to grits. That, together with other seasonings and/or spices can yield a whole panoply of flavors. Read more . Use your microwave to cut time. AND THE SUGAR IS OPTIONAL!
Ingredients:
1/2 cup instant grits
1 tablespoon or more of powdered cheese
2 cups boiling water
1 tablespoon or more of butter
1 tsp salt
dash pepper
other spices/seasonings as desired
Directions:
1. Put the 2 cups of water and butter in the microwave to boil.
2. Meanwhile, in a 8 cup or bigger bowl, add the rest of the ingredients and with a wire whisk, stir to mix well.
3. When the water is boiling, stir into dry ingredients.
4. Put back in the microwave and boil for 3 minutes.
5. Remove and stir well.... if not thick and creamy, put back in the microwave and boil for 3 more minutes.
6. To serve, we add 4-6 packets of Equal to a bowl, add a cup or two of grits and serve with whole milk.
7. Note that the cooked grits can be chilled in a greased coffee can, sliced with a thread and fried like mush.
8. Some of the seasonings and spices you can use: garlic, onion, chili and so forth.
9. Enjoy!
