This is my own variation of the recipe found on the back of the box. I'm constantly thinking of new things I can put with it to adapt to who I'm serving it to. It can be made to be really healthy, vegetarian, comfort food, as a side dish, or a yummy lunch! Read more ! If you don't have all the ingredients don't worry! Add what you can, even if its just the spinach/lettuce and tomato! This recipe can easily be doubled to take to family reunions or any pot luck.
Ingredients:
1 box betty crocker suddenly pasta salad-bacon ranch
1/2 cup miracle whip light
2 cups chopped fresh spinach (may substitute lettuce)
1 large tomato- diced
1/4 cup diced cilantro
3/4 cup diced mushrooms (fresh- not canned)
1 8oz package diced, cooked ham
1 4 oz can diced black olives, drained
salt/pepper to taste
Directions:
1. Prepare boxed pasta salad according to directions on the box
2. Meanwhile chop spinach, tomatoes, cilantro, and mushrooms
3. Drain pasta
4. In a large bowl mix pasta with Miracle Whip according to box directions and stir in remaining ingredients
5. Chill in refrigerator for at least 2 hours
6. Eat up!!!
