One of my favorite cookbooks is Just a Matter of Thyme by Roxie Kelley. All the recipes are delicious and the illustrations by Shelley Reeves-Smith are beautiful. I had tried a lot of chocolate chip cookie recipes, but when I tried this one my family never wanted any other. The page in my copy of the book is stained and well-used. This dough keeps well in the refrigerator allowing you to bake the cookies at any time.
Ingredients:
1/2 cup butter, softened
1/2 cup margarine, softened
3/4 cup brown sugar
3/4 cup white sugar
2 large eggs
1 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 cups chocolate chips
1 cup chopped pecans, toasted
Directions:
1. Blend the butter and margarine together until smooth. Cream with the sugars.
2. Add the eggs and vanilla and beat until smooth.
3. In a separate bowl, mix the flour, baking soda and salt. Add to the creamed mixture and mix well.
4. Fold in the chocolate chips and nuts.
5. Drop dough onto ungreased cookie sheets, allowing at least two inches between cookies.
6. Bake in a preheated 350 degree oven for 10 to 15 minutes (time depends on size of cookies and how you like your cookies).
